Pickled Red Onion

Ingredients
  • onion
  • white-vinegar
  • salt
  • peppercorn
  • fresh-garlic
1 Boil

Add the following ingredients and bring to a boil in a large pot:

  • 2 cups water
  • 2 cups vinegar
  • 2 Tbsp salt
  • 1 Tbsp sugar
  • Black peppercorns
2 Bottle

Chop up the onions and place them in a large pickle bottle. Cut some fresh garlic and place as much as desired. Strain the brine to remove the peppercorns, then pour the hot liquid into the bottle. Tighten the lid and leave at room temperature until it cools down, then place into the fridge. The onions should stay good for several weeks but they don't last long!
