Peel the garlic. Rough-chop the onion and tomatoes so they blend easily.
Add everything to a blender and blend until smooth. If it looks too thick, drizzle in more olive oil while blending until it becomes pourable.
Taste and adjust with salt and pepper. Use as a marinade, dip, sandwich spread, or salad dressing. Store in the fridge; stir or shake before using.
